Cooking Instructions
  1. Step 1: Cook Pasta - Bring a large pot of salted water to a rolling boil. Add rotini or penne pasta, cooking for 7 to 9 minutes until al dente. Drain and rinse under cold water.
  2. Step 2: Prepare Corn - Grill fresh corn on medium heat for about 10 minutes until charred, then cut the kernels off the cob. For frozen or canned corn, thaw or drain before use.
  3. Step 3: Make Dressing - In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper. Whisk until smooth.
  4. Step 4: Combine Ingredients - In a large bowl, combine cooled pasta, prepared corn, halved cherry tomatoes, chopped red onion, cilantro, and cotija cheese. Drizzle with dressing and toss until evenly coated.
  5. Step 5: Chill - Cover and refrigerate for at least 30 minutes before serving.
