Ingredients
  

For the Salad
  • 4 cups Watermelon cubed
  • 2 cups Strawberries hulled and quartered
  • 1 cup Blueberries
For the Dressing
  • 1/4 cup Mint Leaves fresh, chopped
  • 1/4 cup Fresh Lime Juice
  • 2 tablespoons Powdered Sugar adjust to taste
  • 1/4 cup White Rum optional
For the Garnish
  • 1 cup Jicama cut into star shapes, optional

Method
 

Preparation
  1. Thoroughly rinse the watermelon, strawberries, and blueberries. Cut the watermelon into 1-inch cubes, hull and quarter the strawberries.
  2. In a large mixing bowl, gently combine watermelon, strawberries, and blueberries.
Make the Dressing
  1. In a small bowl, combine mint leaves, lime juice, and powdered sugar. Muddle the mint leaves to release their oils.
  2. If adding rum, stir it in with the lime-mint mixture.
Combine Everything
  1. Drizzle the mint-lime mixture over the fruit and gently fold to coat without crushing.
Chill the Salad
  1. Cover and refrigerate for at least 30 minutes to let flavors meld.
Add Jicama Stars
  1. Just before serving, add jicama stars for garnish.
