- Thoroughly rinse the watermelon, strawberries, and blueberries. Cut the watermelon into 1-inch cubes, hull and quarter the strawberries.
- In a large mixing bowl, gently combine watermelon, strawberries, and blueberries.
Make the Dressing
- In a small bowl, combine mint leaves, lime juice, and powdered sugar. Muddle the mint leaves to release their oils.
- If adding rum, stir it in with the lime-mint mixture.
Combine Everything
- Drizzle the mint-lime mixture over the fruit and gently fold to coat without crushing.
Chill the Salad
- Cover and refrigerate for at least 30 minutes to let flavors meld.
Add Jicama Stars
- Just before serving, add jicama stars for garnish.
