Step-by-Step Instructions for Mom’s Cream Puffs
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. In a saucepan, combine water, butter, and salt; bring to a boil. Add flour all at once and stir until mixture forms a ball.
  2. Allow dough to cool for about 5 minutes. Add eggs one at a time, mixing thoroughly. Keep mixing until smooth and glossy.
  3. Drop or pipe small mounds onto the baking sheet. Smooth tops with a wet finger.
  4. Bake for 25-30 minutes, until golden brown. Cool on a wire rack after piercing bottoms to release steam.
  5. Whisk together milk and pudding mix in a bowl until thick. In another bowl, whip cream with powdered sugar and vanilla until stiff peaks form.
  6. Fold whipped cream into pudding mixture. Chill until ready to fill the puffs.
  7. Slice cooled puffs in half, fill with cream, and dust with powdered sugar before serving.
