  • 1 cup Dried apricots Chopped

  • 1 cup Chia seeds
  • 1 teaspoon Ground cinnamon
  • 1 cup Raw pumpkin seeds Pepitas
For the Sweetness
  • 1 cup White chocolate chips

Method
 

Preparation
  1. Begin by pitting the Medjool dates and chopping the dried apricots into small, manageable pieces.
  2. Gather a food processor and a lined 8x8-inch baking pan.
Mixing
  1. In your food processor, combine the Medjool dates, chopped dried apricots, chia seeds, ground cinnamon, and raw pumpkin seeds. Pulse until well blended and sticky.
Adding Chocolate
  1. Carefully mix in the white chocolate chips with a spatula until evenly distributed.
Forming Bars
  1. Transfer the sticky mixture into your lined baking pan and press it down firmly and evenly.
Chilling
  1. Place the baking pan in the refrigerator and let it chill for about 30 minutes.
Cutting
  1. Once set, remove from the refrigerator and cut into desired sizes.
