Step-by-Step Instructions
  1. In a blender, combine rolled oats, baking powder, salt, and ground cinnamon. Blend on high until the oats reach a flour-like consistency, about 30 seconds.
  2. Add the mashed ripe bananas, eggs, melted coconut oil, maple syrup or honey, fresh spinach, and pure vanilla extract to the blender. Blend until completely smooth, about 1-2 minutes.
  3. Pour the blended dry ingredients back into the blender with the wet mixture. Blend just until combined.
  4. Preheat your waffle iron according to the manufacturer's instructions and lightly grease the plates if needed.
  5. Pour approximately 1/2 cup of the batter into the hot waffle iron and cook for 4-6 minutes, until golden brown.
