  • 1 cup Mashed Ripe Bananas Can substitute with ½ cup unsweetened applesauce.
  • 1/4 cup Maple Syrup or Honey Adjust based on personal preference.
  • 1 teaspoon Pure Vanilla Extract Optional but recommended.
  • 1 cup Spinach Can use frozen spinach, thawed and drained.

Method
 

Instructions for Making Waffles
  1. In a blender, place rolled oats, baking powder, salt, and ground cinnamon. Pulse until oats reach a fine, flour-like consistency.
  2. Add mashed ripe bananas, eggs, melted coconut oil, maple syrup (or honey), spinach, and vanilla extract into the blender. Blend on high speed until smooth and creamy.
  3. Return the oat mixture back to the blender with the smooth wet ingredients and blend briefly to combine.
  4. Preheat your waffle iron according to manufacturer’s instructions, lightly greasing if necessary.
  5. Pour approximately ½ cup of the batter onto the hot waffle iron and cook for about 4-6 minutes or until golden brown.
  6. Remove waffles and keep warm in a low oven at 200°F while cooking remaining batter. Serve topped with fruit, yogurt, or syrup.
