Step‑by‑Step Instructions
  1. Preheat the oven to 400°F (200°C). Slice the smoked sausage, mince the garlic, chop the bell peppers, quarter the baby potatoes, and cut the broccoli into florets.
  2. Line a large baking sheet with parchment paper. Toss the baby potatoes and baby carrots with olive oil and spread them out in a single layer. Roast for about 10 minutes.
  3. While the veggies roast, whisk together honey, minced garlic, soy sauce, and remaining olive oil to create the glaze.
  4. After the initial 10 minutes, remove the baking sheet. Add the sliced sausage, chopped bell peppers, and broccoli to the bowl of glaze, tossing to coat.
  5. Transfer the mixture to the baking sheet with potatoes and carrots, spreading everything evenly. Return to the oven and roast for another 20-25 minutes.
  6. Let the dish rest for about 2 minutes before serving. Garnish with chopped parsley or green onions.
