- In a medium bowl, whisk together minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper until smooth. Set aside.
- In a large pot over medium heat, layer sliced spam, cooked sausages, tofu cubes, rice cakes, chopped onion, enoki mushrooms, and kimchi. Arrange neatly for even cooking.
- Pour the prepared sauce over the layers and add enough chicken broth to cover the ingredients. Bring to a boil while checking occasionally to prevent sticking.
- Once boiling, carefully remove the lid and stir in instant ramen noodles and cheese. Cover and let it cook for about 4-5 minutes.
- Gently stir to combine ingredients after noodles are cooked. Remove from heat and garnish with chopped green onions. Serve hot.
