Step-by-Step Instructions
  1. In a medium bowl, whisk together minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper until smooth. Set aside.
  2. In a large pot over medium heat, layer sliced spam, cooked sausages, tofu cubes, rice cakes, chopped onion, enoki mushrooms, and kimchi. Arrange neatly for even cooking.
  3. Pour the prepared sauce over the layers and add enough chicken broth to cover the ingredients. Bring to a boil while checking occasionally to prevent sticking.
  4. Once boiling, carefully remove the lid and stir in instant ramen noodles and cheese. Cover and let it cook for about 4-5 minutes.
  5. Gently stir to combine ingredients after noodles are cooked. Remove from heat and garnish with chopped green onions. Serve hot.
