Step-by-Step Instructions
  1. Start by gathering and prepping your ingredients: mince the garlic, dice the shallot, roughly chop the sun-dried tomatoes, and shred the Parmesan cheese. Chop the basil leaves.
  2. In a large pot over medium-low heat, melt the butter. Once melted, add the minced garlic and diced shallot, and sauté for about 3 minutes until fragrant and translucent.
  3. Stir in black pepper, chili flakes, dried thyme, and tomato paste. Cook, stirring constantly, for about 2 minutes until well combined and fragrant.
  4. Add cheese tortellini and vegetable broth to the pot. Bring to a boil over high heat, then reduce to medium-low and simmer for about 3 minutes until tortellini is tender.
  5. Pour in heavy cream and stir gently. Allow to simmer for an additional minute to thicken.
  6. Stir in grated Parmesan cheese, sun-dried tomatoes, and basil leaves until the cheese melts and is evenly distributed.
  7. Before serving, taste and adjust seasoning. Serve hot, garnished with extra basil leaves.
