- Pat dry the ahi tuna steaks with a paper towel to remove excess moisture.
- Season both sides with kosher salt and fresh-ground black pepper.
- Heat a skillet for 1 minute if non-stick or 3-5 minutes for cast iron until hot.

- Sear the tuna steaks for 1 to 1.5 minutes on the first side.
- Flip and sear for an additional 1 to 1.5 minutes.
