  • 1 tbsp honey or maple syrup use agave syrup for vegan
  • 1 tsp vanilla extract almond extract can be substituted
  • 1/2 tsp cinnamon optional
  • 1/4 tsp salt adjust to taste

  • 1/4 cup dark chocolate chips optional

Step-by-Step Instructions
  1. In a food processor, combine cooked chickpeas and pitted dates. Blend on high until creamy and smooth, about 1-2 minutes. If dates are dry, soak in warm water for 10 minutes before blending.
  2. Incorporate oats, nut butter, honey or maple syrup, vanilla extract, cinnamon, and salt into the chickpea and date mixture. Process for another 1-2 minutes until a uniform dough-like consistency.
  3. Gently fold in dark chocolate chips by hand, distributing evenly without overmixing.
  4. Line an 8×8-inch baking dish with parchment paper. Transfer mixture into the dish and press down firmly to create an even layer approximately 1 inch thick.
  5. Place the dish in the refrigerator and chill for at least 1 hour to firm up.
  6. Once chilled, lift the bars out using parchment paper, slice into desired sizes, and store in an airtight container in the refrigerator for up to one week.
