Preparation
- Preheat your oven to 325°F (160°C) and line an 8x8 inch baking dish with parchment paper.
- In a large mixing bowl, whisk together the dry ingredients: almond flour, protein powder, monk fruit sweetener, baking powder, and salt.
- Add the wet ingredients: eggs, melted coconut oil, Greek yogurt, and vanilla extract. Mix until smooth.
- Transfer the batter to the prepared baking dish and spread evenly. Bake for 20 to 25 minutes.
- Allow the bars to cool completely in the pan.
- Prepare the frosting by mixing cream cheese, protein powder, vanilla extract, and almond milk to desired consistency.
- Once cooled, frost the bars evenly.
- Chill in the refrigerator for at least 30 minutes before slicing into 16 squares.
