  • 2 large Eggs Or 1 flax egg for vegan option.
  • 1/4 cup Coconut oil Can replace with grass-fed butter.
  • 1/2 cup Greek yogurt Plain yogurt as substitute.
  • 1 teaspoon Vanilla extract Add almond extract for unique twist.
For the Frosting
  • 4 ounces Cream cheese Dairy-free alternative for vegan option.
  • 1/4 cup Protein powder
  • 1/2 teaspoon Vanilla extract
  • 1-2 tablespoons Almond milk Adjust for frosting consistency.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: almond flour, protein powder, monk fruit sweetener, baking powder, and salt.
  3. Add the wet ingredients: eggs, melted coconut oil, Greek yogurt, and vanilla extract. Mix until smooth.
  4. Transfer the batter to the prepared baking dish and spread evenly. Bake for 20 to 25 minutes.
  5. Allow the bars to cool completely in the pan.
  6. Prepare the frosting by mixing cream cheese, protein powder, vanilla extract, and almond milk to desired consistency.
  7. Once cooled, frost the bars evenly.
  8. Chill in the refrigerator for at least 30 minutes before slicing into 16 squares.

Notes
