  • 1 tablespoon low-sodium soy sauce substitute with tamari for gluten-free
  • 1 tablespoon cornstarch replace with arrowroot powder for cornstarch-free
  • 1 teaspoon ground ginger use 1 inch minced fresh ginger as substitute
  • 2 tablespoons hoisin sauce optional: substitute with teriyaki sauce
  • 1 tablespoon rice wine vinegar apple cider vinegar can be used
  • 1/2 teaspoon red pepper flakes adjust according to spice preference
For the Noodles and Veggies
  • 2 packs ramen noodles use whole grain or gluten-free noodles if necessary
  • 2 tablespoons sesame oil replace with vegetable oil with less rich flavor
  • 1 medium yellow onion substitute with shallots
  • 2 cloves garlic fresh or powdered garlic can be used
  • 1 pound ground pork substitute with ground chicken, turkey, or tofu
  • 1 medium red bell pepper any sweet pepper variety or snap peas can serve as alternatives
  • 4 cups coleslaw mix with carrots make your own mix using cabbage and shredded carrots
  • 1/2 cup green onions can be omitted or replaced with chives

Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together the low-sodium soy sauce and cornstarch until dissolved. Mix in remaining soy sauce, ground ginger, hoisin sauce, rice wine vinegar, and red pepper flakes. Set aside.
  2. Bring a pot of water to boil, cook ramen noodles for 1 minute less than package directions. Drain and toss with sesame oil.
  3. In a large skillet, heat sesame oil over high heat. Add chopped yellow onion, sauté for about 3 minutes until softened.
  4. Reduce heat to medium-high, stir in minced garlic for 30 seconds. Add ground pork and cook until no longer pink, about 3-4 minutes.
  5. Stir in sliced red bell pepper and coleslaw mix, cook for an additional 2-3 minutes until cabbage wilts.
  6. Add drained ramen noodles and prepared sauce to the skillet. Toss thoroughly over medium heat for 2-4 minutes until evenly coated.
  7. Taste and adjust seasoning if needed. Garnish with chopped green onions and serve hot.

Notes

Discard ramen seasoning packets to avoid an overly salty dish. Cook pork until no longer pink. Let sauce coat noodles well for maximum flavor.
