  2. In the bowl with the cooled quinoa, add 1 beaten egg, 1 cup of finely chopped mixed vegetables, ½ cup of breadcrumbs, and optional cheese. Season with spices and stir thoroughly.
  3. Scoop out portions of the mixture and form into small balls or flat patties, about 1-2 inches in diameter. Place on a parchment-lined baking sheet.
  4. Preheat oven to 375°F (190°C). Bake the bites for 20-25 minutes, flipping halfway, until golden brown and crisp. Alternatively, pan-fry in oil for about 3-4 minutes on each side.
