  • 5 cloves Garlic Cut-side down
  • 2 tablespoons Olive Oil Extra virgin recommended
  • 1 teaspoon Kosher Salt Adjust to taste
  • 1 teaspoon Sage Or herb of choice
  • 8 ounces Feta Cheese Athenos brand recommended
  • 4 cups Vegetable Broth Low-sodium preferred
  • 2 tablespoons Honey Adjust for sweetness
For Serving (Optional)
  • 4 slices Crispy Feta Toast Complement to soup
  • 1/4 cup Fresh Herbs Parsley or thyme
  • 1/4 cup Heavy Cream For drizzling

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe pot, combine olive oil with cubed butternut squash, kosher salt, and dried herbs. Stir gently to coat.
  3. Nestle a block of feta cheese in the center and place garlic cloves around it. Cover and bake for 45-60 minutes.
  4. Once tender, remove from oven, squeeze garlic into pot, add honey and vegetable broth. Stir to combine.
  5. Puree the mixture using a blender or immersion blender until smooth. Adjust seasoning and sweeten if necessary.
  6. Ladle warm soup into bowls, drizzle with honey, and garnish with crispy feta toast or fresh herbs.
