  • 1 cup Apple Cider no-sugar cider can lighten it up

  • 1 cup Chicken Broth or White Wine vegetable broth is a lighter option
For Finishing Touches
  • 1 medium Red Onion sweetness and color
  • 2 pieces Honeycrisp Apples or any sweet apple variety like Fuji

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Season the bone-in chicken thighs with onion powder, garlic powder, smoked paprika, fresh thyme, fresh rosemary, salt, and pepper.
  3. Heat olive oil in a large, oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for about 5-7 minutes.
  4. Flip the chicken thighs and add sliced red onions and Honeycrisp apples to the skillet, sautéing for 2-3 minutes.
  5. Pour in the apple cider and chicken broth (or white wine), then stir in the Dijon mustard and bring to a gentle simmer.
  6. Transfer the skillet to your preheated oven and roast for 25-30 minutes.
  7. Remove the skillet from the oven and tent the chicken with foil to keep warm while you finish the sauce.
  8. Return the skillet to low heat, whisk in salted butter until melted, and let the sauce thicken if needed.
  9. Serve the Rosemary Apple Cider Chicken drizzled with the sauce and caramelized apples and onions.
