  • 1 cup Shredded Cheese (Cheddar or Mozzarella) Freshly shredded cheese melts beautifully.
  • 1 piece Avocado Can be swapped with tomatoes or jalapeños.
  • 1 tablespoon Butter Essential for frying; helps achieve a golden crisp.

Optional Toppings
  • 1 cup Salsa For a zesty kick.
  • 1/2 cup Sour Cream Creamy and cooling.

Method
 

Cooking Instructions
  1. Heat a non-stick skillet over medium heat for about 2 minutes. Add butter until it melts and bubbles.
  2. Crack one large egg into the skillet, season lightly, and cook for 2-3 minutes until whites are set and yolk is runny.
  3. In the same skillet, warm one flour tortilla for 1 minute, add half the shredded cheese, place a fried egg on top, and add avocado slices with remaining cheese.
  4. Place the second tortilla on top and cook for 2-3 minutes until golden brown, then flip and cook another 2-3 minutes.
  5. Remove from skillet, let cool for a minute, then cut into wedges and serve warm, optionally garnished with toppings.
