- In a medium bowl, combine plain Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped mint, and a pinch of salt. Mix thoroughly and refrigerate for at least 30 minutes.
- In a large mixing bowl, add ground beef and optional ground lamb, along with grated onion, minced garlic, parsley, and mint. Mix in spices and salt until just combined.
- With oiled hands, scoop about 2 tablespoons of the kofta mixture and roll into balls, placing them on a parchment-lined baking tray.
- Cook by pan-frying in olive oil over medium heat, baking in a preheated oven at 400°F (200°C), or grilling on skewers for about 3-4 minutes per side.
- Plate the hot Lebanese Kofta Meatballs and serve with cucumber mint sauce and warm pita.
