Step-by-Step Instructions for London Fog Cake
  1. Preheat your oven to 350°F (175°C). Prepare a 9x9 inch metal baking pan lined with parchment paper.
  2. Finely grind the Earl Grey tea and culinary lavender together, then sift to create a powdery blend.
  3. Mix all-purpose flour, ground tea and lavender, baking powder, baking soda, and salt in a bowl. Whisk thoroughly.
  4. Cream softened unsalted butter and granulated sugar until fluffy, then add eggs one at a time and mix in vanilla pasta.
  5. Alternate adding the dry mixture and buttermilk into the butter mixture until combined into a smooth batter.
  6. Pour the batter into the prepared baking pan and bake for 38-44 minutes until a toothpick inserted comes out clean.
  7. Allow the cake to cool for 10 minutes, then prepare the milk soak by heating whole milk and steeping with Earl Grey and lavender.
  8. Cream cold cream cheese with softened butter then sift in powdered sugar; mix until fluffy and creamy.
