  • 1 cup Breadcrumbs Panko breadcrumbs for crunch.
  • 1 large Egg Room temperature.
  • 3 cloves Garlic (minced) Freshly minced for best flavor.
  • 1 small Red Onion (finely chopped) Shallots can be a milder substitute.
  • 1/4 cup Fresh Parsley (chopped) Basil can substitute.
  • 2 Tbsp Fresh Dill (chopped) Tarragon can be used for variation.
  • 1 Tbsp Lemon Zest Lime zest is an alternative.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black Pepper Adjust to taste.
  • 2 Tbsp Olive Oil High-quality extra virgin recommended.
Tzatziki Sauce
  • 1 cup Greek Yogurt Full-fat for richness.
  • 1/2 cup Cucumber (grated & drained) Zucchini can substitute, must be well-drained.
  • 1 clove Garlic (for tzatziki) Adjust to taste.
  • 1 Tbsp Lemon Juice (for tzatziki) Lime juice works too.
  • 1 Tbsp Chopped Dill (for tzatziki)
  • 1 pinch Salt

Method
 

Meatballs Steps
  1. In a large mixing bowl, combine ground chicken, breadcrumbs, room-temperature egg, minced garlic, finely chopped red onion, parsley, dill, lemon zest, salt, and black pepper. Mix until just combined.
  2. Using a cookie scoop or your hands, shape the mixture into 1.5-inch meatballs and place them on a parchment-lined baking sheet.
  3. Drizzle the meatballs with olive oil and bake in a preheated oven at 400°F for 18-20 minutes, or until they reach an internal temperature of 165°F.
Tzatziki Sauce Steps
  1. In a medium bowl, mix Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, chopped dill, and a pinch of salt. Stir well, cover, and chill.
Serving Steps
  1. Once cooked, remove meatballs from the oven and allow them to cool slightly. Serve with tzatziki sauce on the side or drizzled on top.
