- In a medium bowl, whisk together oyster sauce, ketchup, honey, chili garlic sauce, Dijon mustard, minced garlic, fresh ginger, and a splash of water. Set aside about 1/3 cup for basting later.
- Cut the chicken into bite-sized pieces and marinate in the prepared marinade for at least 2 hours, preferably overnight.
- Skewer the marinated chicken pieces onto skewers, brush lightly with canola oil, and season with salt and pepper.
- Preheat the grill to medium heat (350°F to 400°F).
- Cook the chicken skewers on the grill for about 10 minutes, turning occasionally, until the internal temperature reaches 165°F. Brush with reserved marinade in the last 1-2 minutes of grilling.
- Let the kabobs rest for a few minutes before serving, garnished with green onions and sesame seeds.
