Ingredients
  

Marinade
  • 1/4 cup oyster sauce can substitute with hoisin or soy sauce
  • 1/4 cup ketchup
  • 1/4 cup honey maple syrup for vegan
  • 1 tablespoon chili garlic sauce or Sambal oelek/Sriracha
  • 1 tablespoon Dijon mustard can substitute with yellow mustard
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger ground ginger can be used
Kabobs
  • 1 pound boneless, skinless chicken thighs or breasts cut into bite-size pieces
  • 1 tablespoon canola oil or olive/vegetable oil
  • to taste kosher salt
  • to taste black pepper
Garnishing
  • 1/4 cup green onions sliced
  • 2 tablespoons toasted sesame seeds optional

Method
 

Preparation
  1. In a medium bowl, whisk together oyster sauce, ketchup, honey, chili garlic sauce, Dijon mustard, minced garlic, fresh ginger, and a splash of water. Set aside about 1/3 cup for basting later.
  2. Cut the chicken into bite-sized pieces and marinate in the prepared marinade for at least 2 hours, preferably overnight.
  3. Skewer the marinated chicken pieces onto skewers, brush lightly with canola oil, and season with salt and pepper.
  4. Preheat the grill to medium heat (350°F to 400°F).
  5. Cook the chicken skewers on the grill for about 10 minutes, turning occasionally, until the internal temperature reaches 165°F. Brush with reserved marinade in the last 1-2 minutes of grilling.
  6. Let the kabobs rest for a few minutes before serving, garnished with green onions and sesame seeds.
