Preparation Steps
  1. Prepare Marinade: In a large resealable bag or mixing bowl, combine fresh orange juice, lime juice, olive oil, minced garlic, achiote powder, ground cumin, ground coriander, dried oregano, sea salt, and ground black pepper. Stir until fully blended.
  2. Marinate Chicken: Add chicken pieces to the marinade, ensuring each piece is thoroughly coated. Seal the bag tightly or cover the bowl, then massage the marinade into the chicken. Marinate for at least 30 minutes or up to 4 hours.
  3. Preheat Grill/Oven: For grilling, set up your grill for direct and indirect heat. Preheat to medium-high (approximately 400°F), or preheat your oven to 400°F for roasting.
  4. Cook Chicken: For grilling, place marinated chicken pieces skin-side down over direct heat for about 20 minutes. Move to indirect heat and cook for an additional 15-20 minutes. For roasting, arrange chicken skin-side up and bake for 35-45 minutes.
  5. Rest and Serve: Remove the chicken from the grill or oven and let it rest covered with foil for 10 minutes before serving, garnished with lime wedges and chopped cilantro.
