Ingredients
  

For the Marinade
  • cup low sodium soy sauce
  • ¼ cup brown sugar honey or coconut sugar can be substituted
  • 4 cloves garlic freshly minced
  • 2 tablespoons rice vinegar white wine vinegar is a suitable substitute
  • 1 teaspoon sesame oil can be omitted
For the Skewers
  • 1 pound tri-tip steak cut into 1 ½" cubes; sirloin or flank can substitute
  • 1 cup pineapple fresh, cut into 1 ½" chunks
  • 1 cup red bell peppers cut into 1 ½" chunks
  • 1 large sweet onion cut into 1 ½" chunks; any type can serve as a substitute
For the Glaze
  • 1 tablespoon ketchup can be omitted
  • 1 tablespoon honey maple syrup works well as a substitute
Optional Garnishes
  • sesame seeds for finishing touch
  • chopped green onions for sprinkling before serving

Method
 

Directions
  1. In a medium bowl, whisk together low sodium soy sauce, brown sugar, minced garlic, rice vinegar, and sesame oil to prepare the marinade.
  2. Cut the tri-tip steak into 1 ½" cubes and place in a large resealable bag or bowl. Pour two-thirds of the marinade over the steak and refrigerate for at least 4 hours, or ideally overnight.
  3. Once marinated, cut fresh pineapple, red bell peppers, and onion into 1 ½" chunks.
  4. Take soaked wooden skewers and thread marinated steak, pineapple chunks, bell peppers, and onion alternately.
  5. Combine reserved marinade with ketchup and honey to prepare the glaze.
  6. Preheat grill to medium heat, about 350°F. Grill skewers for approximately 15 minutes, turning every 2-3 minutes and brushing with glaze during the last few turns.
  7. Check that the beef reaches an internal temperature of 145-150°F for medium doneness.

Notes

Soak wooden skewers for at least 30 minutes before use to prevent burning. Allowing the steak to marinate overnight enhances flavor and tenderness.
