- In a medium bowl, whisk together low sodium soy sauce, brown sugar, minced garlic, rice vinegar, and sesame oil to prepare the marinade.
- Cut the tri-tip steak into 1 ½" cubes and place in a large resealable bag or bowl. Pour two-thirds of the marinade over the steak and refrigerate for at least 4 hours, or ideally overnight.
- Once marinated, cut fresh pineapple, red bell peppers, and onion into 1 ½" chunks.
- Take soaked wooden skewers and thread marinated steak, pineapple chunks, bell peppers, and onion alternately.
- Combine reserved marinade with ketchup and honey to prepare the glaze.
- Preheat grill to medium heat, about 350°F. Grill skewers for approximately 15 minutes, turning every 2-3 minutes and brushing with glaze during the last few turns.
- Check that the beef reaches an internal temperature of 145-150°F for medium doneness.
