Ingredients
  

For the Steak
  • 1 pound Sirloin Steak Aim for about 1-inch thick for perfect grilling.
  • 1/4 cup Olive Oil Can substitute with avocado oil.
  • 4 cloves Garlic Minced; enhances aroma.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • 1 teaspoon Dried Oregano Classic Mediterranean herb.
  • 1 teaspoon Dried Thyme Classic Mediterranean herb.
  • 1 teaspoon Salt Essential seasoning.
  • 1 teaspoon Black Pepper Essential seasoning.
For the Bowl Base
  • 2 cups Cooked Grains Brown Rice, Quinoa, or Cauliflower Rice.
  • 1 cup Roasted Chickpeas Optional for added crunch.
For the Toppings
  • 1 cup Cherry Tomatoes Can also use grape tomatoes.
  • 1 cup Cucumber Alternatively, bell peppers.

  • 1/4 cup Feta Cheese Optional; can use dairy-free cheese.
  • 1/4 cup Fresh Herbs Parsley or Dill for garnish.
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Can substitute with coconut yogurt.
  • 1/2 cup Grated Cucumber Squeezed to remove excess moisture.
  • 1 tablespoon Honey Omit for Whole30.

Method
 

Steps
  1. In a spacious bowl, combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the steak in this marinade and refrigerate for at least 30 minutes.
  2. Mix Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped dill, and salt and pepper in a bowl for the tzatziki sauce. Chill in the refrigerator.
  3. Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper for the vinaigrette. Set aside.
  4. Heat a skillet over medium-high heat. Add olive oil and sear the marinated steak for 4-5 minutes on each side until medium-rare. Let it rest for 5 minutes before slicing.
  5. Assemble the bowls with cooked grains at the bottom, layer sliced steak, and add toppings of cherry tomatoes, cucumber, red onion, and olives.
  6. Drizzle the tzatziki sauce and vinaigrette over the bowls, and garnish with fresh herbs.
