  • 1 lb Fresh pizza dough or gluten-free frozen dough
  • 2 tbsp Extra-virgin olive oil
For the Toppings
  • 1 cup Canned pumpkin puree fresh pumpkin works too
  • 1 cup Gouda cheese or mozzarella/cheddar as substitutes
  • 1 medium Yellow onion or shallots for a milder flavor

Method
 

Caramelize Onions
  1. In a skillet, heat the olive oil over medium heat, add sliced onion, and cook until soft (about 7-10 minutes). Reduce heat and caramelize for another 20-30 minutes, adding garlic and crushed red pepper in the last 5 minutes.
Prepare Pizza Base
  1. Preheat oven to 475°F. Roll out pizza dough into a round and place on parchment paper, piercing the surface with a fork.
Assemble Pizza
  1. Spread pumpkin puree on the dough, add caramelized onions, and sprinkle gouda cheese evenly.
Bake
  1. Slide the pizza onto the preheated stone or baking sheet. Bake for 12-15 minutes until crust is golden and cheese is bubbly.
Garnish and Serve
  1. Remove from oven, cool for a minute, garnish with parsley, slice, and serve warm.
