  • 1 cups Mozzarella Cheese shredded, fresh is best
  • 0.5 cups Parmesan Cheese grated, use nutritional yeast for dairy-free
  • 1 cups Ground Meat beef or pork; use cooked ground turkey or chicken for lean option
  • 0.5 cups Pepperoni omit for meat-free version or use turkey pepperoni
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • optional Bacon or diced turkey bacon for lighter option

Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large mixing bowl, crack and whisk the eggs until pale and frothy.
  3. Add heavy cream to the eggs and whisk until smooth and consistent.
  4. Fold in mozzarella and parmesan cheese, followed by your choice of cooked ground meat.
  5. Sprinkle in salt, black pepper, Italian seasoning, and garlic powder, mixing gently.
  6. Fill each muffin cup about three-quarters full with the mixture.
  7. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
  8. Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
