  • 1 tsp Red Food Color (Optional) Feel free to omit if you prefer.
  • 1/2 cup Water Necessary for simmering and creating the flavorful sauce.
  • 1 tbsp Oil Vegetable or canola oil works best for frying.

Steps
  1. In a large mixing bowl, combine dark brown sugar, white pepper, rice flour, salt, grated garlic, soy sauce, vinegar, and unsweetened pineapple juice. Whisk the mixture thoroughly until it's well blended and slightly thickened.
  2. Add the skinless chicken thigh fillets into the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least one hour.
  3. Heat a large skillet over medium-high heat and place the chicken along with ½ cup of water. Allow the mixture to simmer for 15-20 minutes, stirring occasionally.
  4. After simmering, add a tablespoon of oil to the skillet and increase the heat. Cook the chicken for an additional 5-10 minutes, stirring occasionally.
  5. Remove the Chicken Tocino from the heat and let it rest for a moment. Serve warm, ideally accompanied by garlic fried rice.
