  • 12 oz Linguine can substitute with fettuccine or penne
For the Steak
  • 1 lb Steak (sirloin or ribeye) avoid using lean cuts
For the Roasted Carrots
  • 4 medium Carrots cuts uniformly for even roasting
  • 2 tbsp Olive Oil can swap with avocado oil
For the Cowboy Butter Sauce
  • 1/2 cup Butter opt for unsalted
  • 4 cloves Garlic fresh, minced
  • 2 tbsp Lemon Juice can substitute with vinegar
  • 1 tbsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Crushed Red Pepper Flakes optional, adjust to taste
  • 1 tbsp Dijon Mustard
  • to taste Salt
  • to taste Black Pepper
For the Finishing Touches
  • 1/2 cup Parmesan Cheese or Pecorino Romano
  • 2 tbsp Fresh Parsley chopped

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) for roasting the carrots.
  2. Toss the sliced carrots with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 15-20 minutes.
  3. Boil salted water in a large pot, add linguine and cook for 8-10 minutes until al dente. Reserve 1 cup of pasta water.
  4. Heat olive oil in a skillet, season steak with spices, and sear for 2-3 minutes each side until golden.
  5. In the same skillet, add butter, minced garlic, lemon juice, and mustard. Sauté until fragrant.
  6. Combine linguine in the skillet, mix with the sauce, then add sliced steak and roasted carrots.
  7. Serve warm with grated Parmesan and chopped parsley on top.
