  • 2 cups Yuca fresh or frozen
  • 2 cloves Garlic freshly minced
  • 1 small Red Onion
  • 1/4 cup Cilantro finely chopped
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika
  • 1 large Egg or flax egg for vegan option
  • 1/2 cup All-Purpose Flour or gluten-free blend
  • Vegetable Oil for frying or coconut oil
For the Garlic-Lime Mojo
  • 1/4 cup Olive Oil or avocado oil
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon White Vinegar
  • 1 teaspoon Cumin

Method
 

Preparation Steps
  1. Boil the yuca in salted water for about 20 minutes until tender, then drain and cool.
  2. Mash the boiled yuca until mostly smooth but slightly chunky.
  3. Combine mashed yuca with garlic, onion, cilantro, salt, pepper, paprika, egg, and flour; stir until cohesive.
  4. Divide the mixture into six portions and shape into thick round cakes.
  5. Fry the cakes in hot oil for 3-4 minutes per side until golden brown.
  6. Prepare garlic-lime mojo by sautéing garlic in oil, then adding lime juice, vinegar, cumin, and salt.
  7. Serve the cakes drizzled with garlic-lime mojo or on the side as a dip.
