Step-by-Step Instructions
  1. In a large pot, heat extra virgin olive oil over medium heat and sauté white onion, ginger, and garlic until translucent, about 5-7 minutes.
  2. Add the broth, dried shiitake mushrooms, soy sauce, rice vinegar, and sesame oil. Bring to a simmer and cook for 30 minutes.
  3. While the broth simmers, mix vegan ground sausage, panko breadcrumbs, and prepared vegan eggs in a bowl and let rest for 5-10 minutes.
  4. Drop small balls of the filling into the broth and cook for about 15 minutes.
  5. Stir in chopped baby bok choy and let simmer for 2-3 minutes until tender.
  6. Gradually add wonton wrappers, stirring gently, and simmer for another 2-3 minutes until softened.
  7. Ladle the soup into bowls and garnish with green onions and a drizzle of chili oil before serving.
