  1. Gather your ingredients: chop two medium onions, slice sausages, and cube four medium potatoes. Prepare carrots if using.
  2. In a large pot, heat oil over medium heat. Add bacon, sauté for 5-7 minutes until crispy, then remove and set aside.
  3. In the same pot, brown sausages for 8-10 minutes on all sides, then add onions and sauté for 3-4 minutes.
  4. Stir in cubed potatoes and sliced carrots (if using), add broth, thyme, and bay leaves. Mix and bring to a simmer.
