  • 4 cloves Minced Garlic Garlic powder can be used as an alternative.
  • 1 tbsp Lemon Zest Lime zest can replace lemon.
For Seasoning
  • 1 tsp Salt Adjust based on personal taste.
  • 2 tsp Dry Oregano Italian herbs can substitute if needed.
For Cooking
  • 0.5 cup Water or Stock Any broth works; can be omitted.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Marinate the chicken in olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dry oregano for at least 1 hour.
  3. Assemble the marinated chicken on a vertical gyro spit plate or makeshift spit using an onion and skewers.
  4. Place the gyro plate in a baking dish with half an inch of water or stock at the bottom.
  5. Bake the chicken for 75 to 90 minutes until golden brown, ensuring the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for about 10 minutes, then slice thinly against the grain.
  7. Serve the sliced gyro meat in warm pita bread with tzatziki, tomatoes, and cucumbers.
