Lemon Orzo Ingredients
  • 1 cup orzo
  • 1 lemon zest and juice
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp freshly cracked pepper

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine all meatball ingredients and mix until just combined.
  3. Scoop out portions of the mixture and roll them into 1-inch diameter balls, placing them on the baking sheet.
  4. Bake for 20-25 minutes until cooked through and reach an internal temperature of 165°F (75°C).
  5. While meatballs are baking, boil salted water in a pot and cook the orzo according to package instructions.
  6. Drain the orzo, add zest and juice of lemon, olive oil, salt, and pepper. Toss to coat.
  7. Serve lemon orzo topped with meatballs and garnish with chopped parsley or feta cheese.
