Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine all meatball ingredients and mix until just combined.
- Scoop out portions of the mixture and roll them into 1-inch diameter balls, placing them on the baking sheet.
- Bake for 20-25 minutes until cooked through and reach an internal temperature of 165°F (75°C).
- While meatballs are baking, boil salted water in a pot and cook the orzo according to package instructions.
- Drain the orzo, add zest and juice of lemon, olive oil, salt, and pepper. Toss to coat.
- Serve lemon orzo topped with meatballs and garnish with chopped parsley or feta cheese.
