Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to about 1/2 inch thickness between two sheets of plastic wrap or parchment paper.
  3. In a mixing bowl, combine ricotta cheese, grated Parmesan, chopped spinach, basil, parsley, garlic powder, salt, and pepper until smooth.
  4. Take a chicken breast, spoon a generous amount of filling onto one side, roll tight, and secure with toothpicks or kitchen twine.
  5. Heat olive oil in a large skillet over medium heat and sear the rolls for about 3-4 minutes on each side until golden brown.
  6. Transfer seared rolls to a baking dish, pour marinara sauce over them and bake for 20-25 minutes until cooked through.
  7. Let rolls rest for 5 minutes, then remove toothpicks or twine, slice into pinwheels, and serve warm.
