- Preheat your oven to 350°F (175°C).
- Prepare the zucchini by slicing and salting it, then let sit for 10 minutes before squeezing out excess moisture.
- In a large mixing bowl, combine the zucchini, cottage cheese, eggs, mozzarella, onion (if using), garlic powder, and salt. Stir gently until just blended.
- Grease a baking dish and pour the zucchini mixture into it, smoothing the top with a spatula.
- Bake for approximately 35 minutes until the top is golden brown and a toothpick comes out clean.
