Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of oil over medium heat. Add the diced onion and bell pepper, and sauté for 5-7 minutes until they soften.
  3. Add the ground turkey to the skillet, cooking for 8-10 minutes until it’s no longer pink and reaches an internal temperature of 165°F.
  4. Stir in the rinsed black beans, corn, diced tomatoes, and taco seasoning. Season with salt and pepper to taste and simmer for about 5 minutes.
  5. Transfer the mixture into a greased casserole dish, spreading it evenly.
  6. Sprinkle shredded cheese over the top of the turkey mixture.
  7. Bake in the preheated oven for 20 to 30 minutes until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving. Enjoy with tortilla chips or a fresh side salad.
