- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of oil over medium heat. Add the diced onion and bell pepper, and sauté for 5-7 minutes until they soften.
- Add the ground turkey to the skillet, cooking for 8-10 minutes until it’s no longer pink and reaches an internal temperature of 165°F.
- Stir in the rinsed black beans, corn, diced tomatoes, and taco seasoning. Season with salt and pepper to taste and simmer for about 5 minutes.
- Transfer the mixture into a greased casserole dish, spreading it evenly.
- Sprinkle shredded cheese over the top of the turkey mixture.
- Bake in the preheated oven for 20 to 30 minutes until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Enjoy with tortilla chips or a fresh side salad.
