Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add 1.5 pounds of beef cubes and sear for 3-4 minutes until browned.
  2. In the same skillet, add the chopped onion and minced garlic, stirring for 3-4 minutes until translucent.
  3. Add 8 ounces of sliced mushrooms and cook for about 5 minutes until tender.
  4. Stir in 2 tablespoons of Dijon mustard and 2 tablespoons of Worcestershire sauce. Mix well.
  5. Pour in 2 cups of beef broth and season with salt and pepper. Simmer for 5 minutes.
  6. Transfer mixture to a slow cooker, add the seared beef and coat well. Cook on low for 6-8 hours.
  7. About 30 minutes before serving, stir in 1 cup of heavy cream and thicken with a cornstarch slurry if needed.
  8. Ladle into bowls or over a base of mashed potatoes, rice, or egg noodles, and garnish with parsley.
