Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the cooked lentils, flax egg, diced onion, minced garlic, nutritional yeast, Italian seasoning, sea salt, black pepper, and tomato paste. Pulse until well combined but still slightly textured.
  3. Slowly incorporate the whole wheat breadcrumbs into the mixture, pulsing again until it binds together. Add more breadcrumbs if the mixture is too wet.
  4. Scoop out about 1-tablespoon amounts of the mixture and roll them into balls, placing them on the baking sheet with space in between.
  5. Bake for 30-35 minutes, flipping halfway through for even browning.
  6. Let the meatballs cool slightly before serving, perfect with marinara or in a sandwich.
