Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your equipment including a skillet, mixing bowl, and colander.
  2. Steam zucchini and yellow squash slices until slightly tender, about 5–7 minutes. Transfer to colander and press to remove excess moisture.
  3. Heat olive oil in skillet over medium heat. Sauté onion for 4–5 minutes until golden. Add minced garlic and cook for an additional 30 seconds.
  4. In a mixing bowl, whisk together eggs, parmesan cheese, salt, black pepper, oregano, and optional red pepper flakes until frothy.
  5. Fold drained zucchini and yellow squash into the sautéed onion and garlic in the skillet. Pour egg mixture evenly over vegetables.
  6. Bake in the oven for 25–30 minutes, or until set in the center and golden brown on top. Check with a knife.
  7. Remove from oven and let it rest for 5 minutes before slicing and serving warm or at room temperature.
