  • 1 pound Shrimp Boil fresh or frozen until pink
  • 1 medium Red Onion Can substitute with green onions
  • 1 cup Celery Diced for crunch
  • 4 leaves Butter Lettuce For serving
For the Creamy Dressing
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
  • 1 unit Lemon Juice and zest
  • 2 tablespoons Fresh Dill Can substitute with parsley or chives
  • 1 tablespoon Dijon Mustard
  • 1 clove Garlic Minced
  • 1/2 teaspoon Kosher Salt Adjust to taste
  • 1/4 teaspoon Black Pepper Freshly ground to taste

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine mayonnaise, lemon juice and zest, dill, mustard, and minced garlic. Whisk until smooth and creamy.
  2. Bring a large pot of water to a boil. Add shrimp and cook for 2 to 3 minutes until pink and opaque. Drain.
  3. Prepare an ice bath with cold water and ice. Transfer cooked shrimp to the ice bath for 3 minutes to cool.
  4. Drain shrimp and pat dry. In a mixing bowl, combine shrimp with chopped red onion and diced celery. Pour dressing over and mix gently.
  5. Serve in butter lettuce leaves or in a bowl. Garnish with additional dill or lemon wedges as desired.
