  • 1 teaspoon Dried Thyme or fresh if available
  • 1 teaspoon Dried Rosemary or fresh if available
  • 2 tablespoons Cornstarch for thickening
  • 1 cup Water for slurry
For Serving
  • 4 slices Bread sourdough or your choice
  • 2 tablespoons Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Trim excess fat from the beef chuck roast, season with salt and black pepper.
  2. Sear the roast in a skillet with olive oil for 5-7 minutes until browned.
  3. Place chopped onion and minced garlic in the slow cooker.
  4. Transfer seared beef to the slow cooker, pour in beef broth, add mushrooms, Worcestershire sauce, thyme, and rosemary.
  5. Cook on low for 6-8 hours or high for 3-4 hours until tender.
  6. Create a slurry with cornstarch and water, stir into the cooking liquid, and cook on high for 30 minutes until thickened.
  7. Slice or shred the beef and mix it with the gravy in the slow cooker.
  8. Toast slices of bread until golden and crispy.
  9. Serve the beef and gravy over toasted bread, garnished with fresh parsley.
