Cooking Steps
- Brown the beef in a large skillet over medium heat for about 6–8 minutes, breaking it apart until fully cooked and browned.
- Transfer the cooked beef to the slow cooker using a slotted spoon, leaving excess fat behind.
- Add matchstick carrots, sliced red bell pepper, and chopped scallions to the slow cooker and stir gently to combine.
- In a separate bowl, combine minced garlic, soy sauce, brown sugar, and chicken stock. Whisk until blended, then pour over the beef and vegetables.
- Cover and cook on low for 4 to 6 hours.
- About 30 minutes before serving, add the ramen noodles to the slow cooker and stir to submerge in the broth.
- After the noodles are tender, give everything a final stir, ladle into bowls, and garnish with sesame seeds and scallions.
