- Sear the beef in a skillet over medium-high heat with olive oil, seasoning generously with salt and pepper. Sear for 2-3 minutes until browned on all sides, then transfer to the slow cooker.
- In the same skillet, melt the remaining butter, add minced garlic, and sauté for about 1 minute until fragrant. Remove skillet from heat.
- Pour beef broth and Worcestershire sauce into the skillet, scraping up browned bits from the bottom. Stir in thyme and rosemary, then pour this sauce over the beef in the slow cooker.
- Halve baby potatoes and add to the slow cooker, tossing gently with the beef and sauce. Top with extra pats of butter.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is tender and potatoes are creamy. Check for doneness.
