- Lightly season the chicken thighs or breasts with salt and freshly ground black pepper. Set aside.
- In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, and grated ginger (if using). Add rice vinegar and red pepper flakes.
- Place seasoned chicken in the slow cooker and pour the sauce over it. Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Remove chicken and set aside. To thicken, mix cornstarch with water to make a slurry and stir it into the sauce. Cover and simmer for about 10 minutes.
- Return the chicken to the slow cooker to soak up the thickened sauce. Garnish with sesame seeds and chopped green onions before serving.
