For the Chicken
  • 1.5 pounds boneless skinless chicken thighs or breasts
  • 1 teaspoon salt for seasoning
  • 1 teaspoon black pepper freshly ground
For the Sauce
  • 1/2 cup honey
  • 1/3 cup soy sauce preferably low-sodium
  • 1/4 cup ketchup
  • 4 cloves garlic minced
  • 1 teaspoon fresh ginger grated, optional
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1/4 teaspoon red pepper flakes optional, adjust to taste
Optional Thickening Ingredients
  • 1 tablespoon cornstarch for thickening
  • 2 tablespoons water for slurry
  • 2 tablespoons sesame seeds for garnish
  • 2 tablespoons chopped green onions for garnish

Method
 

Step-by-Step Instructions
  1. Lightly season the chicken thighs or breasts with salt and freshly ground black pepper. Set aside.
  2. In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, and grated ginger (if using). Add rice vinegar and red pepper flakes.
  3. Place seasoned chicken in the slow cooker and pour the sauce over it. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Remove chicken and set aside. To thicken, mix cornstarch with water to make a slurry and stir it into the sauce. Cover and simmer for about 10 minutes.
  5. Return the chicken to the slow cooker to soak up the thickened sauce. Garnish with sesame seeds and chopped green onions before serving.

Notes
