Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter and granulated sugar, beating until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract, and beat until smooth, about 1-2 minutes.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring gently to form a cohesive dough.
  5. Portion out 1-inch balls of dough and roll them in pastel sanding sugar.
  6. Place the sugar-coated dough balls on the baking sheet, spaced about 2 inches apart.
  7. Bake for 8-10 minutes, until edges are set but centers look slightly soft.
  8. Immediately press a chocolate kiss into the center of each cookie after removing from the oven.
  9. Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
