  • 2 cups Basmati Rice
  • 1 medium Yellow Onion chopped
  • 3 cloves Garlic minced
  • 3 cups Chicken Broth or vegetable broth
Protein
  • 1 pound Chicken Breasts skinless, boneless, cut into cubes
  • 1 can Black Beans rinsed

  • 1 cup Corn fresh or frozen
Flavor
  • 1 cup Salsa
  • 1 tablespoon Chili Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Black Pepper
Cheesy Topping
  • 1 cup Cheddar Cheese shredded

Method
 

Instructions
  1. Preheat your oven to 360°F (182°C) and grease a 9x13-inch casserole dish with cooking spray or olive oil.
  2. Layer uncooked basmati rice, chopped yellow onion, and minced garlic in the greased casserole dish.
  3. Pour chicken broth over the layered ingredients, ensuring the rice mixture is fully saturated.
  4. Add diced chicken breasts on top of the mixture, positioning them evenly.
  5. Gently mix in rinsed black beans and drained corn, ensuring even distribution.
  6. In a small bowl, mix salsa, paprika, chili powder, and black pepper; pour this over the casserole.
  7. Sprinkle shredded cheddar cheese evenly on top.
  8. Cover the dish with foil and bake for 45 minutes; remove foil and bake for another 10 minutes until cheese is bubbly.
  9. Allow the casserole to rest for about 5 minutes before serving.
