- In a medium saucepan, combine 1 cup of peanut butter and 1/2 cup of honey over low heat. Stir continuously for about 2-3 minutes until melted and smooth.
- Mix in 1/4 cup of unsweetened cocoa powder and 1 teaspoon of vanilla extract into the melted mixture. Stir vigorously for 1-2 minutes until fully incorporated.
- Add 3 cups of rolled oats to the chocolate mixture. Stir well for about 2-3 minutes until the oats are evenly coated.
- Using a tablespoon, scoop out portions and place onto a sheet of parchment paper. Flatten each mound slightly.
- Place the parchment paper with cookies in the refrigerator for at least 30 minutes or until firm.
