  • 2 tbsp Neutral Oil Canola or vegetable oil for cooking

  • 3 tbsp Gochujang (Korean Chili Paste) Adjust according to spice tolerance
  • 2 tbsp Mirin or Sake Can substitute with other rice wines or omit
  • 1 tbsp Sugar Adjust to taste
  • 2 cloves Garlic Minced, increase for a stronger flavor
  • 1 tbsp Sesame Oil For nutty aroma

  • 2 cups Steamed Rice Ideal base
  • 1 cup Sliced Cucumber For refreshing crunch
  • 2 tbsp Sesame Seeds For garnishing

Cooking Steps
  1. Slice the fresh king oyster mushrooms into ¼-inch thick pieces. Set aside.
  2. In a mixing bowl, whisk together the soy sauce, gochujang, mirin, sugar, minced garlic, and sesame oil until well combined.
  3. Coat the sliced mushrooms with the marinade and allow them to marinate for at least 20 minutes.
  4. Heat a cast-iron pan over medium heat with neutral oil. Add marinated mushrooms in batches, cooking each side for 2-3 minutes until golden brown.
  5. Return all mushrooms to the pan, pour in the remaining marinade, and cook for an additional 2-3 minutes.
  6. Serve the mushrooms hot over steamed rice, garnished with sliced cucumber, sesame seeds, and scallions.
