- In a mixing bowl, whisk together the soy sauce, gochujang, mirin, sugar, minced garlic, and sesame oil until well combined.
- Coat the sliced mushrooms with the marinade and allow them to marinate for at least 20 minutes.
- Heat a cast-iron pan over medium heat with neutral oil. Add marinated mushrooms in batches, cooking each side for 2-3 minutes until golden brown.
- Return all mushrooms to the pan, pour in the remaining marinade, and cook for an additional 2-3 minutes.
- Serve the mushrooms hot over steamed rice, garnished with sliced cucumber, sesame seeds, and scallions.
