  2. Cook the rinsed sushi rice according to package instructions, typically with 1.25 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 20 minutes.
  3. In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Fold the mixture into the slightly cooled sushi rice.
  4. In a mixing bowl, combine peeled shrimp, sriracha, and mayonnaise. Mix thoroughly until shrimp are coated.
  5. Slice the avocado and cucumber into thin slices and matchsticks, respectively.
