Preparation Steps
- Press the tofu to remove excess moisture for about 15 minutes. Cut into ¾ to 1-inch cubes.
- Heat oil in a pan over medium-high heat. Fry tofu cubes for about 3 minutes per side until golden brown.
- In a skillet, melt coconut oil. Sauté shallots for 4-5 minutes until translucent, then add minced ginger.
- Pour in coconut milk, stir in sambal oelek and red curry paste. Add sugar, coriander, and salt. Let simmer for 3-4 minutes.
- Fold in the crispy tofu into the sauce, adjust seasoning to taste.
- Serve hot with garnished scallions, red pepper flakes, and sesame seeds.
