  • 1 block super firm or firm tofu Press to remove excess moisture
  • 3 tablespoons canola or vegetable oil For frying the tofu

Sauce

  • 2 tablespoons shallots Thinly sliced
  • 1 tablespoon minced ginger Fresh works best
  • 1 can canned coconut milk Full-fat for richness
  • 2 tablespoons sambal oelek Adjust for desired heat level
  • 2 tablespoons red curry paste For depth and flavor
  • 1 tablespoon coconut or brown sugar Balances spiciness
  • 1 teaspoon ground coriander Optional
  • 1 teaspoon diamond crystal kosher salt Adjustable to taste

  • 1 bunch scallions Chopped

Method
 

Preparation Steps
  1. Press the tofu to remove excess moisture for about 15 minutes. Cut into ¾ to 1-inch cubes.
  2. Heat oil in a pan over medium-high heat. Fry tofu cubes for about 3 minutes per side until golden brown.
  3. In a skillet, melt coconut oil. Sauté shallots for 4-5 minutes until translucent, then add minced ginger.
  4. Pour in coconut milk, stir in sambal oelek and red curry paste. Add sugar, coriander, and salt. Let simmer for 3-4 minutes.
  5. Fold in the crispy tofu into the sauce, adjust seasoning to taste.
  6. Serve hot with garnished scallions, red pepper flakes, and sesame seeds.
